As a Sinsinawa Dominican ministry, we are compelled by our
growing understanding of our oneness with creation, and in solidarity with the
people who work the land, we commit to be responsible land stewards.
In 1996, we turned to certified organic gardening to help sustain the spirituality
of the earth, to promote the wellness of our guests by serving healthy food, and
as one method attempting to make the center more self-sufficient.
The garden, with its organic gardening practices, also provides us an opportunity
to educate and involve retreatants and the community. It helps demonstrate the intimate
connection between soul and soil, and the healing power of healthy food.
How is "certified organic" food different from other organic food?
"Certified" means that the food has been grown according to strict
uniform standards that are verified by independent state or private
organizations. Certification includes inspections of farm fields
and processing facilities, detailed record keeping, and periodic
testing of soil and water to ensure that growers and handlers are
meeting the standards which have been set by OCIA (Organic Crop
Improvement Association).
Our gardeners, Lenny and Nick, have worked hard this year to improve
soil conditions with mulch and compost. This has enabled us to foster
the holistic cycle of sustaining the earth and all of God's creatures.
It also produces great tasting veggies with conscience!
Organic refers not to the food itself, but to how it is produced.
Organic food production is based on a system of farming that maintains and
replenishes the fertility of the soil. Organic foods are produced without
the use of synthetic pesticides and fertilizers. They are minimally processed
to maintain the integrity of the food without artificial ingredients,
preservatives or irradiation
